
Asparagus Soup Recipe
Ingredients
1/2 Onion Chopped.
1 lb Fresh Asparagus. Cut the stem off.
2 Cups of Chicken or Vegetable Broth.
2 tbs. Butter.
2 tbs. All purpose flour.
1 Cup of Milk. (Whole Milk of coconut).
1/2 sour cream. Optional.
1 Bag of croutons.
Cook the Asparagus over stove top. Add them to water, cover and bring to a boil over hot heat. Reduce and let it simmer (10 min. approx.)
Once they are tender, transfer them to your blender. Add one cup of broth;
On a separate pot, fry the onion with butter, add the flour, let it brown and add the milk.Makes a nice creamy base Keep aside.
After blending the Asparagus with the broth, transfer the mixture to the pot with the creamy base and add the other cup of broth, stir constantly to mix well on a medium heat until desire warmth.
Serve with sour cream, Texas smokey Chipotle Fleur de Sel and croutons.
