Sheet Pan Gnocchi with Italian Seasoning

Craving a hearty, flavorful dinner that practically makes itself? This Sheet Pan Gnocchi is about to become your new weeknight hero!

Imagine pillowy potato gnocchi roasted until golden and crispy on the edges, mingling with tender roasted vegetables, protein-rich lentils, and bursts of sweet cherry tomatoes. Everything comes together on one pan, kissed with olive oil and finished with the aromatic magic of Ocean Root Fleur de Sel Italian Blend Seasoning and fresh herbs.

This recipe is the definition of effortless elegance—minimal prep, maximum flavor, and just one pan to clean. The gnocchi gets beautifully caramelized, the vegetables become sweet and tender, and the Italian seasoning ties it all together with notes of basil, oregano, and premium sea salt. It's comfort food that feels gourmet, and it's ready in under 30 minutes.

Perfect for busy weeknights, meal prep, or when you want to impress without the stress. Let's get cooking!

Ingredients (Serves 4)

  • 2 cups cooked lentils (brown, black, or green)
  • 1 cup halved cherry tomatoes
  • 1 bell pepper, chopped
  • 1 eggplant, chopped
  • 1 red onion, chopped
  • 4 cloves garlic, minced
  • 1 package mini potato gnocchi
  • ½ cup fresh chopped basil & parsley
  • 2-3 tablespoons olive oil
  • Salt and black pepper to taste
  • Ocean Root Fleur de Sel Italian Blend Seasoning

Directions

1. Prep and toss: In a large bowl, toss all ingredients (except fresh herbs and Italian seasoning) with 2-3 tablespoons of olive oil, a pinch of salt, and a pinch of black pepper until everything is evenly coated.

2. Arrange on sheet pan: Spread the mixture evenly over a parchment-lined baking sheet in a single layer. This ensures everything roasts evenly and gets those delicious crispy edges.

3. Roast: Bake at 400°F for 25 minutes, tossing once or twice during cooking to ensure even browning and prevent sticking.

4. Season and serve: Remove from the oven and immediately sprinkle with Ocean Root Fleur de Sel Italian Blend Seasoning to taste. Toss with fresh basil and parsley, serve hot, and enjoy the symphony of flavors!

Pro tip: This dish is even better the next day! Store leftovers in an airtight container and reheat for an easy, delicious lunch.
